Clinton's Chocolate Chip Cookies

1 cup (240ml) all-purpose flour
1 tsp salt
1 tsp baking soda (bicarbonate of soda)
1 cup shortening (lard)
1 cup firmly-packed light brown sugar
cup granulated sugar
1 tsp vanilla
2 eggs
2 cups rolled oats, uncooked
1 (350 g) package of semi-sweet chocolate chips

Preheat oven to 350C.

In a bowl, combine the flour, salt, and baking soda. In a large bowl, beat
together the shortening, sugars, and vanilla with an electric mixer on medium
speed until creamy. Add the eggs and beat until light and fluffy. Gradually beat
in the flour mixture and rolled oats. Stir in the chocolate chips. Drop the dough
by rounded teaspoonfuls on to baking sheets. Bake for 8-10 minutes or until
golden brown. Cool on wire racks.

Gravlaks à la Momo

5 kilo fresh salmon
1/2 cup sherry/cognac
4 tbs salt
4 tbs sugar
2 ts black pepper
finely cut fresh dill

Freeze fish for 2 hours to make it easier to work with.
Cut along the back and along the bones towards the belly.
Wash and dry with a paper towel.
Rub salt, pepper, dill and sherry into the flesh.
Wrap in vacuumed plastic bag and refrigerate for 3 days.
Turn every 12 hours. Cut into four pieces, add more dill and freeze.
