Miso Soup

Serves 4

3 cups water
2 tbs miso paste
2 green onions, finely minced
1/2 cake tofu, cut into 1/2 inch cubes
2-3 fresh mushrooms, thinly sliced
1/2 ts sesame oil

Heat oil in bottom of small pot, add the green onion. Cook for about a minutes stirring frequently.
Add 2 1/2 cups water. Dissolve miso in 1/2 cup water and add to pot.
Bring to a boil. Lower heat, add the mushrooms and the tofu.

Dates with Coffee

Serves 4

500ml strong black coffee (espresso strength)
1 ts caster sugar
20 green cardamom pods, lightly crushed
1 cinnamon stick, broken in half
200-250g Greek yogurt

Stone the dates carefully to keep their shape, and place in a bowl.
Heat the coffee with the sugar and cardamom, then pour over the dates.
Leave to infuse with the cinnamon in the fridge overnight or for up to 2 days.
Serve chilled with yogurt.
